Beer-Batter Shrimp Bake

Preperation: Best to make double or triple the recipe because this appetizer goes fast!

Special Equipment:

 1/3 c. All-Purpose Flour
 1/4 c. Beer
 1 Lg. Egg White
 1/4 tsp. Salt
 3/4 c. Dry Bread Crumbs
 1/4 c. Chopped Pecans
 1/4 tsp. Pepper
 1/4 tsp. Salt
 1 lb. Large Shrimp, cleaned, peeled and deveined

Alternative Ingredients:


1. Preheat oven to 425°F. Spray a wire rack with vegetable cooking spray and place on a baking sheet.

Hint: Line the baking sheet with foil for easy clean-up.

2. In a medium bowl, combine flour, beer, egg white and salt; beat until smooth.

3. In another bowl, stir together dry bread crumbs, pecans, pepper,and salt. Dip shrimp in bread crumb mixture, then into the beer batter; dredge a second time in bread crumbs.

4. Set on prepared rack and bake for 12 minutes, or until shrimp have turned pink and coating is golden.
