How To Prepare: Live Manila Clams
Our favorite preparation is simple: On medium head, saute clams with a sauce of lightly-salted garlic and wine. Add light fresh herbs or chilies if desired, but remember that the flavor profile of clams calls for light seasoning.
Add mussels and other seafood and make your favorite Paella concoction.
Or add some mussels and make a curry that you'll never forget. Just buy a small can of curry (any type, red, yellow, green, etc), and mix with a can or two of coconut milk (depending on spice level desired), then add basil and a lemongrass stick or two. (Um.. Don't eat the lemon grass stick. It's just for flavor.)
FOR ALL PREPARATIONS: Do not overcook or you will be eating a rubbery clam! Remove clams from heat as quickly as possible after they open. Have a large bowl nearby and carefully remove the clams a few at a time as they open up. That's all you have to remember!
